The 2021 Best International Restaurant Group goes to...

It's extraordinarily rare to find a restaurant group that has such high production, serving hundreds of covers a night, and is still note perfect on service, food and atmosphere.


If you can't make it to Maido in Lima, or its sister restaurant Aji in Macao (still closed at the time of this post), then find a COYA near you for a spectacular Nikkei experience.


The room is lush and luxe. The pisco is on point. The anticuchos are smoky, refined version of chowing down on beef heart in the middle of a Lima public square. The corn three ways with chili threads offers the best description of the restaurant.... the perfect amount of sweetness with a bit of heat.


But enough about the food. This is, after all, a restaurant group award. Despite a packed house and extensive menu, ticket times are exactly where they should be. There's a heavy management presence on the floor, but they don't get in the way of each other. Servers understand the nuances of the menu and can offer informed recommendations. Remember, I'm watching the entire dining room, so I'm taking in the interactions multiple serves have with multiple sections.


If you've been around this blog, you know I'm not easily impressed. And COYA impresses me. In fact, this is the first time The Single Table has given out and International Restaurant Group Award. It's a joy to see a high-volume restaurant firing on all cylinders and delivering the highest standard to its guests.


To qualify for The Single Table awards, I had to visit that location in the given calendar year.
